This is a quick and healthy recipe to whip up while you wait for your favorite whole-wheat pasta to boil. The sweetness from this delicious sauce comes naturally from fresh tomatoes and contains no added sugar.
- 2 Tbsp. olive oil
- 1/2 onion (diced into one inch pieces)
- 4 garlic cloves (minced)
- 4 lbs. tomatoes (cored, seeded, diced)
- 3/4 tsp. salt
In a large saucepan over medium-high heat, warm the olive oil. Add the onion and cook until tender or about 4 minutes, stirring occasionally. Add the garlic and cook until fragrant or about 30 seconds, stirring occasionally. Reduce heat to medium and add tomatoes and salt. Cook, stirring occasionally, until tomatoes are saucy and heated through, 3 to 4 minutes. Serve atop your favorite whole-wheat pasta.
Makes 10 (2/3 cup) servings.
