Preparation Time: 20 minutes
- 1 pound green beans, with ends cut
- 2 pound red potatoes, cut into bite sized pieces
- 3 cloves garlic, minced
- 3 Tbsp. fresh dill
- 4 Tbsp. balsamic vinegar
- 3 Tbsp. olive oil
- 1 Tbsp. Dijon mustard
- Black pepper, to taste
- 1/2 cup chopped red onion
- 1 cup diced red bell pepper
Steam green beans for 5 to 8 minutes. Cook potatoes in boiling water until tender. Place both in a large bowl and cool. As they are cooling, prepare dressing by mixing garlic, dill, vinegar, oil, Dijon mustard and pepper together. Add onion and bell pepper to cooled green beans and potatoes. Top with dressing and mix.
