Baking cauliflower into crispy chips is a healthy alternative to greasy potato chips. Add red pepper flakes for a spicy kick.
- 1 lb. cauliflower florets
- 1 tbsp. extra virgin olive oil
- 1/2 tsp. kosher salt
- 1/2 tsp. red pepper flakes
- 2 tbsp. parmesan cheese, grated
Preheat oven to 425 degrees. Rinse and pat cauliflower dry with a paper towel. Thinly slice florets into chip-like pieces. Arrange evenly on 1 or 2 baking sheets. Drizzle with olive oil and season with salt and pepper flakes. Bake for 20-25 minutes, or until crispy. Sprinkle with cheese and serve immediately.
