Crab provides a great source of protein and is packed with vitamin B12 that boosts energy and mood.
- 1 lb. tomatoes
- 1 red bell pepper
- 1/2 lb. cooked crab meat (or imitation crab)
- 1/2 cup shredded, reduced-fat cheddar cheese
- 2 Tbsp. fresh lemon juice
- 1/2 tsp. pepper
- 1/4 cup reduced-fat mayonnaise
- 1/4 tsp. paprika
Dice tomatoes into large chunks. Cut bell pepper into 1-inch pieces. Combine tomatoes, bell pepper, crab, cheese, lemon and pepper. Combine mayonnaise and paprika. Serve salad garnished with mayonnaise mixture.
