Preparation Time: 15 minutes
- 1 cup plain low-fat yogurt
- 1 Tbsp. chopped chives
- 2 cloves garlic, minced
- 1 Tbsp. chopped parsley
- 2 tsp. chili sauce
- 1/8 tsp. pepper
- 4 fresh artichokes (medium), prepared and cooked*
or 2 (14-ounce) cans, drained and sliced
Combine all ingredients, except artichokes. Blend well. Refrigerate until serving. Serve with cooked artichokes.
Note: Cut off the top inch from each artichoke. Boil artichokes in water for 20 to 45 minutes, until artichokes are tender. Alternatively, steam artichokes for 15 to 30 minutes, or until tender.
